Martin Monteverde’s culinary career began early on, he was inspired by his family, his Swiss mother and Peruvian father, and their love for quality and tradition. After graduating from Florida International University with a degree in Hospitality Management he went on to work at the family business in the Fishing Industry where he spent the next 9 years. It is at this time in 2009 that he has the opportunity to open his first restaurant, Trattoria Sole, offering a family inspired Italian - Peruvian cuisine. In 2011, Martin opened his second restaurant Mixt, a small exclusive restaurant serving both Peruvian and Japanese creations. With this restaurant is when Martin’s quest for the perfect Nikkei restaurant begins and the kitchen transformation begins. In 2016, the 1111 Brand is born out of a new restaurant concept, offering Peruvian food and some early Nikkei creations. This restaurant became 1111 Peruvian Bistro. In the summer of 2022, 1111 Nikkei Izakaya opened to the public exclusively serving Nikkei Cuisine.Chef Martin recently won an award for Best Overall Dish at Maui's Annual Ag Fest Grand Taste where he competed against some of the islands top Chefs.
